Gubbeen - A semi-soft, washed-rind cheese with a pinkish white rind with a white bloom. A young Gubbeen reveals a real buttery milky taste with scents of meadow flowers and hazelnuts. (Cork, Ireland – cow's milk – pasteurised - vegetarian)
Cashel Blue - Ireland’s original, farmhouse blue cheese. It's texture varies from chalky to soft yellow paste and a characteristic bluish green mould. Rich & buttery with a well-formed blue colour. (Co. Tipperary, Ireland – cow's milk - pasteurised - vegetarian)
Cooleeney - A full-flavoured white mould, pale yellow soft cheese with robust flavours of mushroom and oak. Handmade on the Mayer family farm since 1986 (Co Tipperary, Ireland – cow's milk – unpasteurised - vegetarian)
Killeen Goats Gouda - a gouda cheese, in the classic Dutch style. The paste is brilliant white. At three months the flavour is fresh, clean and milky, with a very slight lactic note in the finish. The cheese develops more fruitiness as it ages up to five months, and then gradually turns nutty.
